Honey Cookies

I am one of those rare people that enjoys coffee and tea... depending on circumstances. Morning? Definitely coffee... helps jump start my day. Bedtime? A hot steamy cup of tea with a little honey... guaranteed to make me drowsy. Breakfast foods? Coffee. Looking at these cookies, I'd say... tea! This is one of my husband’s favorites from his childhood. I love to surprise him with a batch. The dough is great to work with and you don’t even have to refrigerate it before rolling them it in the sugar. This is also a great recipe for people want a little change from chocolate. I hope you enjoy them!
Honey Cookies
Cream:
¾ cup butter flavored shortening
1 cup sugar
Add:
¼ cup honey
1 beaten egg
Sift in:
2 ¼ cups flour
¼ teaspoon salt
1 ½ teaspoon cinnamon
1 ½ teaspoon baking soda
1 ½ teaspoon baking powder
Form into small balls and roll in sugar. (I use a small cookie scoop.)
Bake at 350° for 8 to 9 minutes.
Let cool on pan for 1 to 3 minutes before moving to cooling rack.
(For even better flavor I fill part of my ¾ measuring cup with real butter and then finish it off with shortening.)

I was gone for a long weekend and was hoping Julie might answer you in my absence since this is her cookie recipe. Since she hasn't replied, I'll give it a go. In general, you can substitute margarine and butter with a couple of considerations. First, butter burns at a lower temp and quicker than margarine. So be mindful of cooking times and possibly lower the temp 25 degrees. Next, butter "flattens" a cookie more than margarine. This usually makes the cookies a bit crunchier and thinner. You can add a bit more flour if this is a problem. In this recipe I would start by making a batch with 1/4 cup more flour and see if they hold their depth. I'm still hoping Julie might share her insights. Good luck. I plan to try these next week... with all butter, too.

Thank you! I'm more of a 'butter' person, so I wasn't sure how those substitutions worked. I'll try it out and let you know how it goes. They sound so yummy....honey cookies. I want to pour a cup of coffee just thinking about it.

This sounds like my kind of cookie to make and my husband's kind of cookie to eat. I'm going to give them a try right away. I have some fresh honey I need to use up. Here goes. :)

I cannot believe this! This is my husbands favorite Christmas cookie. The first year we were married he requested these. I thought he was nuts. These didn't seem like Christmas cookies, they looked like everyday cookies. But his mom didn't bake much, and only made these at Christmas, so they became a Christmas cookie. I liked them so much that I tried making them throughout the year but he balked and said they wouldn't seem special. So, we make them every Christmas. They are so yummy I don't complain. I do roll half of them in green sugar and half in red sugar to give them a more festive look. And I have to admit I do make them throughout the year because I like them so much, but I make them when I have to take cookies somewhere so he only have them at Christmas. Do give these a try!
